TOFU GARLIC MAYO TOAST

Toast is a bread of slice which has been browned by radient heat aka toasting bread which makes bread crispy. Usually toast are consumed in breakfast with or without any spread. When toast is topped up with various spread, veggies or other food items, it knowns as open sandwich or open face sandwich. They are alsp known as bread baser.
I have prepared such toast or open sandwich with the goodness of sourdough, tofu and veggies.

Preparation time: 10 minutes
Cooking time: 10 minutes
Makes: 4 toasts
Ingredients:
4 slice sourdough
4 tbsp butter
1 tbsp olive oil/butter
1 finely chopped onion
6 finely chopped garlic cloves
1/4 cup finely chopped mix bell pepper
1/4 cup boiled corn kernels
1 tsp black pepper powder
1 tsp oregano
1 tsp chilli flakes
Salt to taste
Basil leaves for garnishing
For Tofu Garlic Mayo:
3/4 cup mayonnaise
1/2 cup grated tofu
1 tbsp finely chopped garlic
1 tsp mixed herbs
Method:
- Mix all ingredients of tofu garlic mayo and keep in refrigerator.
- Heat oil in skillet, sautƩ onion garlic for couple of minutes.
- Add mix bell peppers and sautƩ for one minute.
- Further add salt,pepper, oregano and sautƩ for one minute. Then add red chilli flakes and sautƩ few seconds. Then turn off the heat and keep aside.
- Toast bread slices in butter.
- Spread prepared mayo on toasted bread.
- Top up it with sautƩed veggies.
- Garnish with fresh basil leaves.
- Relish the healthy toast immediately.
