CAULIFLOWER NUTTY KEBABS

Cauliflower is an extremely healthy and nutritious vegetable. Cauliflower is very low in calories but high in vitamins. It contains very rich source of vitamins. It contains very rich source of vitamin C and also has vitamin K and B6 in good quantity along with several minerals which we need everyday. Because it contains high amount of fiber, helps in digestive health. Rich source of antioxidants protects our cells from harmful free radicals and inflammation.
I prepared kebabs using cauliflower along with green peas, potatoes and cashew nuts.

Preparation time: 10 minutes
Cooking time:20 minutes
Serves: 4 persons
Ingredients:
2 cup cauliflower florets
1 cup green peas
1/4 cup finely chopped coriander
2 potato,boiled and mashed
2 tbsp chopped cashewnuts
1 tbsp oil
1 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp dry mango powder
1 tsp garam masala
Salt to taste
Oil for shallow frying
Method:
- Chop cauliflower florets and green peas in chopper.
- Heat one tbsp oil in a pan and saute chopped veggies for a while. Add salt , turmeric and red chilli powder abd sauté for a couple of minutes.
- Further add mashed potato, coriander, chopped cashew nuts and rest of spices. Mix well and cook for two minutes and then turn off the heat. Let it cool a little. Then prepare kebabs with greased palms.
- Heat skillet, pour some dropes of oil and grease it.
Arrange kebabs and cook from both sides on medium to low flame. Add oil as required. - Serve hot.
