Vegetable Sourdough Casserole

VEGETABLE SOURDOUGH CASSEROLE

Casserole is a baked dish which is served hot. It is prepared in a casserole dish which is deep and wide. Food is prepared and baked in the same dish and served in same dish. Casserole is usually prepared with veggies, protein and a starchy binder. Sometimes it can have layers of food.
Here I have prepared my type of casserole with vegetables and sourdough bread.

Preparation time: 15 minutes
Baking time: 20 minutes
Serves: 4 persons

Ingredients:
6 slices of sourdough bread
3 tbsp butter
1 cup tomato puree
2 tbsp all purpose flour
1 cup milk
1 finely chopped onion
1 tbsp finely chopped garlic
1/4 cup finely chopped carrot
1/4 cup finely chopped mixed bell pepper
1/4 cup boiled corn kernels
1 tbsp mixed herbs
1 tbsp oregano
1 tbsp chilli flakes
1/2 cup grated cheese
Basil leaves for garnishing

Method:

  1. Cut the sourdough bread in dices.
  2. Heat butter and sauté for 2 minutes.
  3. Further add carrot and sauté for 2 minutes
  4. Then add bell peppers and sauté for one minutes.
  5. Add corn kernels and sauté few seconds.
  6. It’s time to add all purpose flour and sauté for a couple of seconds. Then add milk gradually and stir continuously. Cook till it becomes little thick.
  7. Then add tomato puree and mix well. Also add mixed herbs and salt. Cook for 2 minutes.
  8. Add bread dices, mix lightly and then turn off the heat.
  9. Transfer this to the baking tray and top up with grated cheese. Sprinkle oregano and red chilli flakes.
  10. Bake it for 20 minutes in a preheated oven on 180℃.
  11. Garnish with basil leaves and serve hot.

Note:

  1. You can add veggies of your choice.
