SPICY MAYO SANDWICH

Sandwich is a food typically cosisting of vegetables, cheese, meat etc. along with bread slices. Basically sandwich is a non-Indian food but we have adopted it very much like our own cuisine and we make it with out own Indian taste. Various breads like plain white bread, brown bread, whole wheat bread, multigrain bread are used for sandwiches. Recently sourdough bread also used.
Sourdough bread is a bread made by the fermentation of dough using lactic acid bacteria and wild yeast. Fermentation imparts a sour taste and improves keeping qualities. As sourdough relies on a mix of wild yeast and lactic acid bacteria not a baker’s yeast to leaven the dough, it is richer in nutrients, contains lower amount of gluten and generally easy to digest than regular bread. So it is healthier alternative to regular white bread. History says that first sourdough bread was made by the Egyptians around 1500 BC but it is not a certain saying. (Info source: Internet)
I have prepared veggie loaded spicy mayo sandwich using the sourdough.

Preparation time: 15 minutes
Cooking time: 10 minutes
Makes: 2 sandwiches
Ingredients:
4 slices of sourdough bread
4 tbsp butter
1 cup spicy mayo
1 finely chopped onion
4 baby corns, cut in roundels
4 finely chopped lettuce leaves
1 tbsp finely chopped capsicum
1 tbsp finely chopped purple cabbage
Method:
- Cut slices from sourdough loaf. Chop all the vegetables.
- Add all chopped veggies in spicy mayo and mix.
- Take 2 slices of bread ,apply butter. Apply prepared mayo-veg spread on one slice and cover with other slice.
- Toast this sandwich with little butter in skillet or girdle.
- Serve hot.
