FARAA / PHARA

India is a large country with many states. So Indian cuisine consists of variety of regional and traditional cuisines and is heavily influenced by religions too. Chattisgarh is one of the Indian state which has a rich tradition of food and culture. It is known as rice bowl of India and majority of Chattisgarh cuisine’s traditional and tribal foods are made of rice and rice flour. Some well known and popular breakfast dishes made from rice and rice flour are faraa , chilla, angakar roti, chousela roti etc.
Faraa/phara is one of the most popular and healthy breakfast of Chattisgarh. Faraa is prepared with less ingredients and very quick.

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 2 persons
Ingredients:
1 cup rice flour
1/2 cup cooked rice
Salt to taste
For tempering:
2 tbsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp sesame seeds
1 sprig curry leaves
2 green chilli slits
1 tbsp finely choppped coriander
Method:
- Mash cooked rice with hands than add rice flour amd salt in it , mix wwll. Knead medium soft dough by adding water.
- Divide dough in equal marble sized balls. Wet your palms with water,take one ball and roll between palms to give shape like a rolling pin, meaning thick from centre and thin from both ends.
- Add water in a steamer and turn on the heat. Grease the steamer plate with oil. Arrange the prepared faraa in a greased plate and set in the steamer, cover and cook them for about 15 minutes or till they cook.
- Once the faraa are steam cooked, remove from the steamer and let it cool a little.
- Heat oil and prepare tempering by adding tempering ingredients, then carefully add steamed faraa and let it cook on a slow flame for 4-5 minutes. Toss them several times. Turn off the heat.
- Garnish with coriander and served hot with green chutney or tea.
Note:
- Can add ginger chilli paste in faraa dough.
