MITHI BHAKHRI
(SWEET BHAKHRI)

India is a large country with many states. Many festivals- religious, national and cultural festivals are celebrated across India. Some festivals have special importance in specific states amd celebrated there with full enjoyment. Shravan/savan month of the Hindu calendar is considered as the month of festivals as many festivals falls in this month. In Gujarat specially in Saurastra region five days long festival known as Satam-Aatham is celebrated in this month with fun and frolic. It starts with Nag Pancham and ends with Nand Mahotsav. This festival is about various celebrations on each day. One of it is Shitla satam in which using gas stove is not allowed and have to consume cold food which prepared on the previous day, which known as Randhan Chhath. On this day food is prepared which is consumed on next day- Shitla satam.
Mithi bhakhri also known as gali (sweet) bhakhri is one of the foods which is consumed cold on Shitla satam. This bhakhri is a wheat flour flat bread which is crispy and sweetened with jaggery. This is just like Sindhi sweet lolo.

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 2 persons
Ingredients:
1 cup wheat flour
1/2 cup coarse wheat flour
1 tbsp ghee
1 tsp sesame seeds
1 tsp cardamom powder
1/4 cup jaggery
Ghee for cooking bhakhri
Method:
- Add half cup water in jaggery and melt it. Mix both flour , ghee and crumble it.
Add cardamom powder, sesame seeds and knead hard dough with jaggery water. - Divide the dough in equal lemon sized balls. Roll thick bhakhri.
- Heat skillet, cook bhakhri little from.both the sides without ghee.
- Then add ghee and roast bhakhri with the help of wooden press, on a low flame.
- Keep each roasted bhakhri separate and let it cool completely, then store in the container. Consume when you wish. It can be fresh and consumed until 4-5 days.
