OATS & VEGETABLE PANCAKES

Pancakes, chilla etc are generally consumed in breakfast. Though pancakes are continental dish and made from all purpose flour . Here I made it from semolina and oats along with vegetables. Combination of all these results in delicious and healthy breakfast, which can prepared in a less time.

Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 4 persons

Ingredients:
2 cups semolina
1/2 cup oats
1/4 cup boiled corn
1 small capsicum
1 small red bell pepper
1 onion
6 garlic cloves
2 green chillies
1/2 cup curd
1 tsp cumin seeds
1/4 cup finely chopped coriander
Oil for cooking

Method:

  1. Mix semolina,oats and curd in one bowl and cover for 10-15 minutes.
  2. Chop all vegetables together in chopper.
  3. After 15 minutes, add cumin seeds in batter. Add all vegetables, coriander and salt. Mix well.
  4. Add some more water to make proper batter, as after 15 minutes semolina blooms and batter becomes thick.
  5. Heat skillet and add a ladleful batter and spread it evenly. Add few drops of oil and let it cook.
  6. Then flip other side, add few drops of oil and cook.
  7. Serve hot with chutney.
