OATS & VEGETABLE PANCAKES

Pancakes, chilla etc are generally consumed in breakfast. Though pancakes are continental dish and made from all purpose flour . Here I made it from semolina and oats along with vegetables. Combination of all these results in delicious and healthy breakfast, which can prepared in a less time.

Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 4 persons
Ingredients:
2 cups semolina
1/2 cup oats
1/4 cup boiled corn
1 small capsicum
1 small red bell pepper
1 onion
6 garlic cloves
2 green chillies
1/2 cup curd
1 tsp cumin seeds
1/4 cup finely chopped coriander
Oil for cooking
Method:
- Mix semolina,oats and curd in one bowl and cover for 10-15 minutes.
- Chop all vegetables together in chopper.
- After 15 minutes, add cumin seeds in batter. Add all vegetables, coriander and salt. Mix well.
- Add some more water to make proper batter, as after 15 minutes semolina blooms and batter becomes thick.
- Heat skillet and add a ladleful batter and spread it evenly. Add few drops of oil and let it cook.
- Then flip other side, add few drops of oil and cook.
- Serve hot with chutney.
