RICE FLOWER BALLS

Snacks are important part of our routine and in any cuisine. Snacks can be dried or freshly made. Dried or freshly made, they are majorly fried. And we know that fried foods are not good for health.
Today, I have prepared steamed rice balls which are stuffed with vegetables. This steamed snack is gluten free, vegan and healthy snacking option. By the looks of it, we can call them Corona balls😂.

Preparation time: 15 minutes
Cooking/steaming time: 20 minutes
Makes: 6-8 balls
Ingredients:
For outer layer:
1/2 cup rice flour
1/2 cup warm water
1/2 tsp cumin seeds
Salt to taste
1/2 cup rice (soaked)
For stuffing:
2 tsp oil
1 tsp green chilli paste
1/2 cup grated carrot
1/4 cup finely chopped capsicum
1/4 cup finely chopped coriander
2 potatoes ( boil & mashed)
1 sachet maggi masala-e-magic
1 tsp dry mango powder
1/4 tsp turmeric powder
Salt to taste
Method:
- Soak rice for at least half an hour. Add salt and cumin seeds in rice flour and knead soft dough by adding warm water.
- Heat oil in a pan, add chilli paste and saute for a second and add grated carrot and capsicum, saute for couple of minutes.
- Further add masala-e-magic, turmeric , dry mango powder, salt and mix. Now add mashed potato and coriander, mix and cook for 2-3 minutes. Let it cool.
- Once this mixture cools down, prepare small balls with greased hand.
- Drain out water from soaked rice.
- Now add water in steamer and turn on the heat. Take some rice dough in greased palm and spread it by pressing with other hand. Put prepared vegetable ball in centre and cover and seal it properly. The surface of ball should be crack free and smooth.
- Roll this ball in soaked rice.
- Put it in greased steamer plate, continue with rest dough and balls.
- Cover the steamer and let them cook for about 15 minutes.
- Serve hot.
