MUSKMELON SORBET

Sorbets are refreshing frozen dessert, originated in Ancient Persia. Sorbets are also called ‘water ice’. Sorbet is prepared from fruit juice puree, liquor like wine, honey etc. Normally sorbets are dairy free. Sorbet is easy and best option to beat the summer heat. We can prepare this frozen fruity dessert with just a few ingredients.

Preparation time: 15 minutes
Setting time: 3-4 hours
Serves : 4 person
Ingredients:
2 cup muskmelon pulp
1/2 cup sugar
1 tbsp gelatine
1/2 cup water
2 tbsp lemon juice
1/2 tsp cardamom powder
Method:
- In a half cup water, add sugar and gelatine and keep aside for five minutes, further melt it on low flame. Once it melts, remove from the heat and let it cool.
- Add muskmelon pulp, cardamom powder and lemon juice in sugar syrup, once it cools down. Mix it well to incorporate all ingredients well.
- Keep the mixture in the freezer. Let it set till it becomes mushy.
- Then beat it well with electric beater to break all the crystals.
- Then again keep in freezer to set.
- Once set, scoop out sorbet and serve.
Note:
- Add gelatine helps to minimize crystalization.
