(PEARLMILLET CHILLA)

Chamchamiya is a traditional Gujarati delicacy which falls under the tag of lost recipes/forgotton recipes. This healthy delicious delicacy is prepared from bajra flour(pearl millet flour)and methi (fenugreek leaves)along with garlic and other spices. Chamchamiya is similar to chilla or pancake and is prepared in a jiffy. Chamchamiya are consumed especially in winter as it is said that bajra helps to keep our body warm and we get fresh, tender fenugreek leaves in abundance. Because batter is spread with a spoon (Chamcha in Gujarati) it is called chamchamiya. So whatever we call chilla, pancake or chamchamiya, we must include this almost lost recipe but very healthy and delicious recipe in our diet. This is best option for morning breakfast and evening snack in winter.

Preparation time: 10
minutes
Cooking time: 15 minutes
Serves: 3 persons

Ingredients:
1 cup pearl millet flour
1/2 cup finely chopped fenugreek leaves
1/4 cup finely chopped coriander
1 tsp green chilli paste
1 tsp carrom seeds
1 tbsp sesame seeds
1 tsp turmeric powder
1 tsp roasted cumin powder
Pinch of asafoetida
Salt to taste
Oil as required

Method:

  1. In a broad deep vessel, add all ingredients. Spare half of the sesame seeds. Prepare thick batter like chilla by adding water. Cover and rest for 10-15 minutes.
  2. Now heat the skillet and grease it with oil. Sprinkle some sesame seeds. Take a laddle ful of batter and spread it in circular motion. Sprinkle some more sesame seeds on top and let it cook..
  3. Flip on other side, once it is cooked properly from bottom. Let it cook and remove on plate. Continue with same process and prepare rest of chamchamiyas.
  4. Serve hot with chutney/ketchup.

Note:

  1. You can add curd at the time of preparing batter.
  2. Can add green garlic too.
