ADA PRADHAMAN
(FLATTENED RICE/POHA PUDDING/KHEER)

Ada Pradhaman is a traditional Keralan dessert made by rice ada (poha) , coconut milk and jaggery. Ada pradhaman is specially prepared in every Keralan household during Onam festival. It is one of the main elements of Sadya. Ada pradhaman is one type of payasam and known as a king of payasam. Traditionally coconut milk and jaggery is used but we can replace them with milk and sugar. I prepared with dairy milk and suagr.

Preparation time: 5 minutes
Cooking time: 15 minutes
Serves: 2 persons
Ingredients:
1/2 cup flattened rice/poha
3 cups milk
2 tbsp ghee
2 tbsp sugar
10-15 kismis
10-15 cashew halves
1/2 tsp cardamom powder
Method:
- Heat ghee and fry cashew halves and kismis turn by turn. Then in the same ghee and vessel sauté flattened rice.
- Further add milk and let it cook for 3-5 minutes, so flattened rice becomes soft and pradhaman becomes thick.
- Now add sugar and cook for couple of minutes so sugar melts and mixes with pradhaman.
- Lastly add cardamom powder and fried dryfruits and turn off the heat.
- Serve hot, warm or chilled.
