BREAD PUDDING

Bread pudding is a dessert made with slightly stale (hard) bread and custard. It can be prepared with or without eggs. The no-waste dish is so old that nobody knows quite when or where it originated. People in 13th century England called it “Poor man’s pudding” because the cooks who made it couldn’t afford to throw any ingredients away. This bread based dessert is popular in many countries with basic variations.
I have prepared eggless Indian style bread pudding with custard. Basically British dessert but in Indian style bread pudding and it happens to be a hot favourite at Mumbai’s Irani restaurants. This baked and flavourful dish tastes best when served warm or hot and that’s why it is perfect for winter.

Preparation time: 5 minutes
Cooking time: 10 minutes
Baking time: 30-40 minutes
Serves: 3 persons
Ingredients:
6 bread slices( preferably 2-3 days old)
3 tbsp butter
2 cup milk
2 tbsp custard powder
4 tbsp sugar
1/2 tsp vanilla essence
2 tbsp chopped almonds
2 tbsp chopped hazelnuts
2 tbsp brown sugar
1 tsp nutmeg powder
Method:
- Lightly apply butter on bread slices and then cut in small pieces.
- Dilute custard powder in 1/4 cup of milk and heat rest of the milk adding sugar.
- After one boil and sugar melts completely, turn the flame on low and add custard milk mixture and keep stirring till milk thickens, then turn off the heat. Add vanilla essence and keep it aside.
- Now grease the bowl or baking dish and arrange bread pieces, butter side facing up.
- Pour custard mixture to coat all bread pieces well. Sprinkle nuts over it.
- Spread brown sugar evenly over it. Melt butter and pour over it. Lastly sprinkle nutmeg powder.
- Bake for about 30-40minutes in preheated oven at 180℃.
- Serve hot or warm.
