PICO DE GALLO

Pico de gallo also known as Salsa Fresca, Salsa Cruda or Salsa Bandera is uncooked or raw salsa, commonly used in Mexican cuisine. It is traditionally prepared from tomato, onion, serrano peppers, salt, lime juice and cilantro. Pico de gallo can be used in the same way as cooked salsa. Pico de gallo literally means “beak of rooster”. It is said it was eaten by pinching between thumb and finger making the shape of a rooster’s beak. That’s why salsa is known as Pico de gallo. Salsa Bandera means ‘flag sauce’, this is because the colour of tomato,onion, green chilli, cilantro are reminiscent of the colours of Mexican flag – Red ,White, Green. Whatever the name we say, but this spicy, tangy and delicious sauce tastes best with nachos or various chips and some mexican dishes.

Serves: 2 persons
Ingredients:
2 tomatoes
1 onion
1 green chilli
1/2 green capsicum (optional)
2 tbsp finely chopped coriander
1 tsp roasted cumin powder
1 tsp oregano
1 tbsp lemon juice
Salt to taste
Method:
- Deseed tomatoes and roughly chop it.
Peel onion and roughly chop it. Add tomatoes, onion in chopper along with chilli and capsicum and chop everything. - Transfer into the bowl, add salt, cumin powder, coriander and mix well.
- Lastly add oregano and lemon juice. Referigerate it for some time.
- Enjoy chilled Pico de gallo with your choice of chips.
