SHAHI TUKDA / TUKRA


Shahi tukda is scrumptious and luscious sweet prepared from bread. It is type of bread pudding. It is said this dish originated in Mughlai cuisine in the 1600s. It is much similar to the Hydrabadi “Double ka meetha”. This rich and royal dessert is served in Royal families after lavish meals.


Preparation time: 10 minutes
Cooking time: 20 minutes
Served : 6 persons

Ingredients:
6 slices bread ( I have used brown bread)
For sugar syrup:
3/4 cup sugar
1 cup water
2-3 cardamoms
1/4 tsp saffron
For serving:
2 cups rabdi
1/4 cup grated or crumbled khoya
For garnishing:
1 tbsp almond silvers
2 tbsp pistachio silvers
Few rose petals

Method:

  1. Trim the sides of breads and cut diagonally to make triangles. Dry roast them on a skillet.
  2. Heat one cup water and 3/4 cup sugar in a heavy bottom pan, add saffron and cardamoms ( crushed ). Let it boil for 5-7 minutes or till thick sugar syrup is prepared. Turn off the heat and keep aside.
  3. Also heat ghee and fry the roasted bread from both sides. Transfer this fried bread in a plate.
  4. Dip the fried bread in prepared sugar syrup, after couple of minutes, remove them.
  5. At the time of serving arrange the prepared bread in the plate. Top up with rabdi. Sprinkle some khoya. Garnish with almond-pistachio silvers and rose petals.
  6. Our Royal Shahi Tukda is ready to relish, enjoy it.
