Red Chilli Pickle

RED CHILLI PICKLE

Pickles are a special condiment in the Indian cuisine. There are a large range of pickles prepared in Indian households. There are pickles which can be stored and consumed whole year and there are pickles which can be consumed fresh.
Today I have prepared red chilli pickle. This flavourful, spicy, sweet and tangy pickle is a good choice to pair with any meals.


Preparation time: 15 minutes
Cooking time: 30 minutes
Serves: 8 persons
Ingredients:
250 grams red chillies
200 grams jaggery
2 tbsp coarse grinded coriander seeds
2 tbsp coarse grinded mustard powder
1 tbsp kashmiri red chilli powder
1 tsp turmeric powder
1 tsp asafoetida
1 tsp dry mango powder
1 tbsp fennel seeds
1 tbsp cumin seeds
2 tbsp oil

Method:

  1. Wash chillies and pat dry then cut it from centre and remove the seeds and chop them.
  2. Coarsly grind fennel seeds and cumin seeds, mix them with coarse grinded powders( kuria ). Grate jaggery in thin slices.
  3. Heat oil and add half of mix spices. Sauté for a while. Further add jaggery and let it melt a little.
  4. Then add red chilli powder, turmeric powder, dry mango powder, mix well and cook for a few seconds on a slow flame.
  5. Now it’s time to add chopped chillies and salt. As you add red chillies, it will leave it’s water. Let it cook till it becomes thick and water is evaporated. Lastly add spared spice mix, cook for a few minutes. Then turn off the heat.
  6. Let it cool completely. Then store it in a clean, air tight glass jar.
