SING PAK (PEANUT BARS)

Peanuts also known as groundnuts, goober and pinder in the USA, monkey nuts in the UK is a legume crop grown mainly for its edible seeds. It is widely grown in the tropical and sub tropical areas.
Peanuts are similar taste wise and nutrition wise to walnuts and almonds. These oil seeds are rich in protein,fat and various nutrients. Though peanuts are an excellent source of many vitamins and proteins, we should keep in mind that some people are allergic to peanut protein.
Apart from culinary use of peanuts, peanut butter and peanut oil are also used widely in cooking.
Sing Pak/ Mandvi pak (sing/mandvi is Gujarati word for peanut) is popular ,healthy sweet which can also be widely consumed during fasting. Today, I have prepared it with jaggery instead of sugar.

Preparation time : 5 minutes
Cooking time: 5 minutes
Serves: 2 persons

Ingredients:

2 cup peanut powder
1 cup grated jaggery
2 tsp ghee
1 tsp cardamom powder
1 tsp almond pistachio flakes

Method:

  1. Heat ghee in a thick bottom pan. Add jaggery and keep stirring till jaggery melts. It will take hardly 2-3 minutes.

2. Add peanut powder, once jaggery melt. Mix and cook for couple of seconds. Add cardamom powder, mix and turn off the heat.

3. Transfer this to greased plate. Sprinkle dryfruit flakes and press lightly.

4. Make cuts with knife when it is warm. Remove pieces when cool completely.

5. Store it in an air tight jar. These healthy, protein rich peanut bars are also best during fasting.
