Aachar/pickles are one of the main condiments in Indian cuisine. As we know there are many varieties of pickles which are available across India. Apart from salads , pickles also have special place in Indian platter.
Green chillies are a must and always found in Indian pantries. Green chilies are used in various dishes in various ways and they are also consumed in pickled version. Wadhvan- town in Gujarat, is popular for it’s tender and less spicy green chillies, which are consumed raw or fried with meals and snacks. It taste best with Thepla, Bhakhri, ganthiya etc. Popularly known as “Wadhvani marcha” , they are available abundantly in winters and pickle prepared from these chillies can be stored for a whole year and it can be also prepared for fresh consumption.
If we have to store it for a whole year, process is different. Here, I have prepared instant green chilli pickle.

Serves : 2 persons

Ingredients:

100 gms. Green chillies (Wadhvani marcha)
2 tbsp split mustard seeds
2 tbsp oil (groundnut oil)
1 tsp turmeric powder
1/4 tsp asafoetida
2 tsp or to taste salt
1 lemon

Method:

  1. Wash chillies , cut vertically from centre and discard the seeds and then cut in halves. Generally they are not cut in halves but for easy consumption I cut them.

2. Now add salt and 1/2 tsp turmeric and mix well. Cover and let it rest for one hour. After one hour transfer it in a colander so excess water drains out.

3. Heat oil and let it cool slightly. In a bowl, add split mustard seeds,salt and asafoetida and mix well. Add warm oil and mix.

4. Now add chillies in it and mix well. Also add lemon juice and mix well.

5. Our instant chilli pickle is ready. It can be stored for one week in refrigerator.

Note:

1. You can use any green chillies.

2. It tastes best if kept for at least one hour after prepared.
