POTATO FOXNUT KEBABS
( ALOO MAKHANA TIKKI )

Potatoes – the jack of all vegetables and foxnuts – healthiest dry fruit are combined here and it’s turned out as a delicious snack. It can be consumed as fasting item also.

Preparation time : 15 minutes
Cook time: 15 minutes
Serves : 4 persons

Ingredients:

1 cup fox nuts
1 cup boiled and mashed potatoes
1 tbsp chilli paste
1 tsp fennel seeds
1 tbsp roughly crushed peanuts
1 tsp dry mango powder
1 tsp chaat masalo
1 tsp garam masala
2 tbsp ghee
Rock salt to taste
Oil for frying
If not using for fasting:
1/4 cup bread crumbs
1/4 cup corn flour

Method:
1. Heat one tbsp ghee and roast foxnuts. Once they cool down , grind it in a coarse powder.

2. Now in a bowl, add mashed potatoes, ground foxnuts, peanuts, chilli paste and all spices and salt. Mix well.

3. Prepare kebabs out of it.

4. Add 1/4 cup of water in cornflour and make slurry.
5. Turn on the flame and heat oil. Dip kebabs in a slurry and then roll it into the bread crumbs.

6. Deep fry it from both the sides on medium flame till it becomes golden. Remove it in tissue lined plate.

7. Serve hot.

Note:
1. For use in fasting, skip step 4 & 5, instead dip kebabs in arrowroot slurry.
