DATES KODO MILLET PUDDING ( KHAJOOR KODRI KHEER)

Kodri/ Kodra or Kodo millet is an annual crop, primarily grown in India but also grown and available in Nepal, Philippines, Indonesia, Vietnam and Thailand. It is originated in West Africa. This is low profile millet is a very nutritious and like all millets, they are highly fiber rich
They have low glycemic index, which helps in sugar control. Apart from rich fiber they are gluten free, easy to digest, rich in antioxidants and good source of few vitamins and minerals.
Dates or date palm is widely cultivated in Middle East, North Africa, South Asia and many tropical and sun tropical regions. Dates contain natural sugar in large amount. They are good source of antioxidants along with proteins and fibers. These nutrients makes dates very nutricious and help with many health benefits.
Here is a delicious and healthy pudding recipe using these two nutritious ingredients.

Preparation time : 5 minutes
Cooking time : 20 minutes
Serves : 2 persons
Ingredients:
1/4 cup kodo millet(kodri)
1/4 cup chopped dates
1/4 cup jaggery powder
4 cup milk
1 tsp cardamom powder
1 tbsp almond flakes
1 tbsp pistachio flakes
Method:
1. Wash and soak kodri for at least half an hour. More time you keep it soaked, it will cook faster.
2. Heat milk in a thick bottom pan. After one boil, turn the flame to medium and let it boil for 1-2 minutes.

3. Then add soaked and drain kodri and dates.

4. Let it cook on low to medium flame. Stir and scrap occasionally. It will take about 10-12 minutes to cook kodri.

5. When kodri is cooked and mixture turns thick, add jaggery powder, mix and cook for a couple of minutes.
6. Lastly add cardamom powder, almonds and pistachio flakes and turn off the heat.
7. Serve hot or cold.

Note:
1. Adjust quantity of milk according to your choice of consistency.
2. Can add nutmeg powder and cinnamon powder too.
