Chawli also known as Choli in Gujarati is long beans green vegetable which is available through out the year. These beans are available about 12-30cms long, dark green in colour and each pod contains small, light green coloured edible seeds in it. They are known also as long podded cow pea, snake bean, yard long bean etc. Always choose fresh and slender chawli which are crisp.
This low calorie vegetable contains good amount of vitamin A&C and it is rich in phyto chemicals and antioxidants. So it is beneficial to manintain good health.
Apart from making sabzi, they can also be stir fried and use in many continental dishes too.
Here is a recipe of very simple Gujarati style sabzi with basic spices, consume in daily meals. Yes , it take pretty good time in chopping. ☺️

Preparation time : 15 minutes
Cooking time : 15 minutes
Serves : 4 persons

Ingredients:

400-500 grams fresh chawli
2 tbsp oil
1/4 tsp cooking soda
1tbsp coriander cumin powder
1 tbsp red chilli powder
1 tsp turmeric powder
Salt to taste

Method:

1. Trim both the ends of chawlis and chop it in small pieces.

2. Heat oil , add cooking soda and chopped chawli.

3. Mix and let it cook in high flame for couple of minutes.

4. Then add about one cup of water and salt. Once the water starts boiling turn the flame to medium and let it cook uncovered. Stir occasionally.

5. Once it is cooked, add all the spices, mix and cook for 2-3 minutes on high flame. Turn off the heat and keep it uncovered till it becomes lukewarm to keep the green colour intact.

6. Serve along with meals/roti.

Note:
1. Can skip adding turmeric for deep green colour
2. You can add potatoes, dhokli, vadis etc.
