DOUBLE POTATO HALWA

Halwa/sheera is one of the most popular and traditional Indian sweet. Various halwa/sheera are prepared in different occasions in Indian households.
India is a country of festivals and culture. Many religious festivals are celebrated in India with lots of enthusiasm. And religious festivals are celebrated with various rituals along with fasting. So various fasting dishes are also prepared during festivals.
It is said that Sweet Potatoes are favourite of Lord Shiva. On Mahashivratri – a festival celebrated in honour of Lord Shiva – sweet potatoes are offered to Lord Shiva. People make sweet potato halwa on this day. In other words we can say that Mahashivratri celebration is incomplete without this halwa.
Sweet Potatoes are starchy and sweet root vegetable. Sweet potatoes are rich in fiber, vitamins and minerals. They are also rich in antioxidants which protect our body from free radicals and help in chronic disease. Fibers and antioxidants promote good gut health. Beta carotene in sweet potatoes helps in improves eye vision and health.
Potato halwa/ sheera is also similarly popular in fasting dishes. Today I prepared double potato halwa by using both potatoes.

Preparation time: 10 minutes
Cooking time : 20 minutes
Serves : 4 persons
Ingredients:
2 sweet potatoes
1 potato
3/4 cup milk
1/4 cup sugar
2 tbsp ghee
1/2 tsp saffron
1 tsp cardamom powder
1 tbsp almond flakes
1 tbsp pistachio flakes
Method:
1. Wash and steam cook both potatoes for 10-15 minutes or until it cooks.


2. Once they cool, peel off and grate them and mix well.



3. Now heat ghee and saute and cook it for 4-5 minutes on slow flame.
4. Then add warm milk and sugar and mix it properly, also add saffron and cardamom powder.


5. Again cook for 4-5 minutes on a low flame, add almond and pistachio flakes.
6. You will notice , ghee separates and halwa forms a lump like.
7. Then off the heat and serve hot.
Note:
1. You can add more ghee.
