BEETROOT PEANUT BARFI

Iron rich beetroot when combined with protein rich peanuts, the outcome is yummy, sweet and healthy. It will satisfy your sweet cravings in a healthy way. As beetroot has natural sweetness in it, we need less sugar and in addition I didn’t use ghee/butter. So it will be , of course, a healthy option.
Preparation time: 15 minutes
Cooking time : 15 minutes
Serves : 4 persons
Ingredients:
1/2 cup khoya ( dehydrated milk solids )
1/4 cup beetroot puree
1/4 cup sugar
2 tbsp roasted peanut powder
2 tbsp dessicated coconut
1/4 tsp cardamom powder
Method:
1. Roast khoya for 2-3 minutes.

2. Add beetroot puree and sugar, mix well and cook till it becomes little thick.
3. Add dessicated coconut and peanut powder. Mix well and cook till it becomes thick and starts leaving sides of the vessel. Lastly add cardamom powder. Mix and turn off the heat.


4. Transfer it to a greased plate. Cool and cut into desired shape.

Note:
1. Can add other dryfruits.
2. Can replace sugar with palm sugar or jaggery powder.
