RAGI DHOKLA
(FINGER MILLET STEAMED CAKE)

Finger millet/ Ragi / Nachni is a glutenfree grain which is rich in fiber, iron, calcium, good carbs, amino acids and vitamin D. It is considered to be a great food for weight control, diabetes.
Dhokla is a famous Gujarati steamed snack. Dhoklas prepared from.rice and lentil fermented batter need advance planning to prepare as it includes process like soaking, grinding, fermenting and steaming . There are also quick and instant recipes for spongy dhoklas which are prepared from semolina, gram flour etc.
Here is Ragi Dhokla prepared in combination with semolina.

Preparation time : 15 minutes
Cooking time : 20 minutes
Serves : 4 persons
Ingredients :
2 cup ragi flour
1.5 cup semolina
2 tbsp green chillies
3 cup buttermilk
2 tsp fruit salt
Salt to taste
For tempering :
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp sesame seeds
8-10 curry leaves
Pinch of asafoetida
Coriander for garnishing
Method:
1. Mix ragi flour, semolina, salt, green chillies and butter milk and prepare lumpfree batter. Cover and keep it a side for 15 minutes.



2. Turn on the heat and add water in steamer and let it boil. Grease the plate or thali with oil.
3. Now check the batter if it looks thick ,add some water or butter milk. We need batter like idli. Add fruit salt and mix well and immediately pour batter in the greased plate.

4. Put this plate in steamer , cover and cook for 12-15 minutes.

5. Once it cooks, remove from the steamer, wait for a while and cut it in desired shape and size.
6. Heat oil and prepare temper from tempering ingredients and pour over dhoklas.
7. Garnish with coriander and serve.

Note:
1. You can skip tempering. It tastes good with coriander chutney and groundnut oil.
2. Can take both flour in same proportion.
