SESAME SEMOLINA BARFI

Barfi is a popular milk based indian sweet. The name is derived of the Urdu word ‘Barf’ which means snow. Basic barfi is white like snow. Besan barfi, kaju barfi, sing (peanut) barfi,chocolate barfi are popular varients of barfis.
Rava/sooji barfi is unlike regular barfis. There are also different recipes for making rava barfi.
Here I have prepared barfi using sesame seeds and semolina, which is different from regular barfi not in taste but also in texture.
But it is healthy as well as delicious.

Preparation time: 5 minutes
Cook time: 20 minutes
Serves: 4 persons
Ingredients:
1 cup sesame seeds
1 cup semolina
1 cup sugar
1/2 cup ghee
2 tbsp almond slices
2 tbsp pistachio slices
1 tsp cardamom powder
Method:
1. Dry roast sesame seeds on low flame for 2-3 minutes. Transfer into a plate and keep aside.

2. In the same pan , add ghee and saute semolina on a low flame till it turns aromatic and changes colour. Then turn off the heat.


3. Now take the sugar in one pan, add water till sugar submerges and turn on the flame.
4. Let the sugar melt completely. Stir continuously. Cook for 2-3 more minutes after sugar melts.
5. Now add sauted semolina and sesame seeds and mix well.

6. Add almonds, pistachio and cardamom powder. Mix and turn off the heat.

7. Keep stirring till it cools down a little, then shift it to a greased plate. Flatten and smoothen surface with spatula.

8. Sprinkle some more almond and pistachio flakes on top.
9. Make cuts on barfi while it is warm, then let it cool snd separate pieces and store it.
Note:
1. You can decrease the quantity of sesame seeds.
2. Can add other dry fruits of your choice.
