(FRIED FENUGREEK DUMPLINGS)

Methi Muthiya are deep fried dumplings prepared from fenugreek leaves, wheat flour and gram flour. Muthiyas are indespensable in the most popular Gujarati traditional winter speciality Undhiyu. Apart from adding in Undhiya, Muthiyas can be added in many other dishes. This crunchy and flavourful muthiyas can be best companion for tea in winters.

Cooking time: 15 minutes
Serves : 4

Ingredients:

1 cup finely chopped fresh fenugreek leaves
1 cup coarse wheat flour
2 tbsp gram flour
1 tbsp oil
1 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp coriander cumin powder
1 tsp sugar
1/4 tsp cooking soda
1 tsp lemon juice
Salt to taste

Method:

1. Add all spices, gram flour and oil in coarse wheat flour and mix well. Add cooking soda in chopped fenugreek leaves and pour lemon juice over it, bubbling occurs. Then mix it well. Add this to the flour mix and knead medium dough by adding a little water.

2. Grease your palm with oil and make small ,oblong dumplings from the dough.

3. Heat oil, deep fry dumplings on medium flame till it turns crispy and golden.

4. Remove it in a tissue lined plate. Once it cools completely, store it in a clean and air tight jar.
