ALMOND CRANBERRY CHIKKI

When we hear ‘Chikki’, most commonly we visualize peanut chikki, til chikki. But nowadays the range of chikki is very large. Lots of varieties are there.
Cranberries are a popular super food with lots of nutrients. Cranberries are native to North America and now grow across to Northen United States, Chile and Canada. It is not easily available or grown in India so here dried craneberries are used more.
Here I have made chikki using protein rich almonds along with fiber and antioxidants rich cranberries.

Preparation time : 5 minutes
Cooking time : 10 minutes
Serves : 4 persons
Ingredients:
1/2 cup chopped almonds
1/2 cup chopped dried cranberries
1 cup sugar
Oil for greasing
Method:
1. Chop almonds and cranberries. Keep a plate or work place ready, clean and greased.
2. In a thick bottom pan, transfer sugar and let it melt on a low flame. Keep stirring continuously.
3. Once the sugar melts and turns to brown colour, do not cook more.
4. Add chopped almonds and cranberries and turn off the heat and mix properly.


5. Immediately transfer it to greased work place or plate and roll it with greased rolling pin.

6. Mark cuts as per your choice, while it’s hot. Then let it cool completely.
7. Remove pieces when they cool down and store it in an air tight jar.
