BEETROOT ALOO PARATHA

Paratha is a popular Indian flat bread cooked with ghee, butter or oil and served with any dal or vegetable prparation. Paratha can be prepared plain or with any stuffing. Apart from plain wheat paratha , we can prepare various paratha by adding different ingredients. In stuffed parathas apart from popular aloo paratha , many other stuffed parathas are famous like mooli (radish) paratha, gobhi ( cauliflower) paratha, paneer parathas.
Here I have transformed typical aloo paratha in a healthy version. I replace outer layer plain paratha with beetroot paratha.

Serves: 4 persons
Ingredients:
For paratha:
2 cup wheat flour
2 tbsp oil
1 cup beeetroot puree
Salt to taste
For stuffing:
6 big potatoes
2 tbsp green chilli paste
1/4 cup finely chopped coriander
10-15 finely chopped mint leaves
1 tbsp chaat masala
1 tbsp garam masala
1 big lemon
Salt to taste
Ghee for making paratha
Method:
1. Knead medium , pliable dough with beet puree. Cover and keep aside.

2. Wash and pressure cook potatoes. Once the steam is released, remove them, remove peels and mash them.
3. Add all ingredients and salt in mashed potatoes. Add lemon juice too. Mix well.
4. Divide the dough in equal parts. Take one part, roll a little, put prepared stuffing in centre and garher the sides to centre and seal properly.
5. Now roll a thick paratha with light hand with the help of dry flour.
6. Further heat the skillet, first roast paratha lightly frim both sides without ghee.


7. Then apply ghee and cook paratha from both sides on medium flame.


8. Serve hot with curd, raita, pickle etc.
