BEETROOT CHAKRI

Chakri/Chakli or Murukku is crispy ,crunchy, savoury fried snack which is more popular in Gujarat, Maharastra and Southern States. In Gujarat /Maharastra it is known as Chakri/Chakli and in Southern States it is known as Murukku. It’s name is derived from its spiral shape. Generally it is prepared from rice flour which gives it nice crunch. It can also be prepared from wheat flour. Now a days various flours and flavours are used to make Chakri.
Today I have added a very nutritious and iron rich beetroot to chakri and made these crunchy snacks healthy also.
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 8 persons
Ingredients:
3 cup rice flour
1 cup or more beetroot puree(boiled)
1 cup Malai (cream)
1cup Curd (preferably sour)
1 tbsp sesame seeds
1 tbsp red chilli powder
1/4 tsp asafoetida ( optional )
Salt to taste
Oil for frying
Method:
1. Add all ingredients except curd, in rice flour and mix well.
2. Add curd and knead medium dough.

3. Heat oil,fill the extruder ( chakri machine) with prepared dough.
4. Prepare chakri on clean surface or in a plate.
5. Deep fry it from both sides on a slow to medium flame till it becomes crunchy.



6. Once it cools down completely store it in an air tight jar and relish it when you wish.

Note:
1. Do not fry it on high flame else it will be soft from the inside.
