PAPAYA SAMBHARO
(STIR FRIED RAW PAPAYA)

This is one of the accompaniment of famous Gujarati snack Fafda/Ganthiya and also in regular Gujarati meals. Sambharo is stir fying of vegetable with green chillies ,turmeric and salt. Some of the popular Gujarati sambhara are cabbage, carrot,raw papaya and ivy gourd. In many Gujarati house holds, various sambhara are prepared with meals.

Preparation time: 5 minutes
Cooking time: 5 minutes
Serves : 4 persons

Ingredients:

1 small hard raw papaya
1-2 green chillies
1 tsp mustard seeds
1/4 tsp turmeric powder
Pinch of asafoetida
Salt to taste
1 tbsp oil

Method:

1. Wash and peel papaya, remove seeds and grate it. Chop green chillies too.

2. Heat oil, add mustard seeds. Once they splutter, add turmeric and asafoetida.

3. Add grated papaya ,chilli and salt.

4. Mix and stir fry on high to medium flame for 1-2 minutes.

5. Serve with meals or snacks.
