MATAR KACHORI ( GREEN PEAS KACHORI )

Matar kachori is a spicy deep fried Indian snack which is popular in Delhi, U.P., Rajasthan and Gujarat. Various kachoris like Khasta Kachori, Daal Kachori, Pyaz Kachori, Matar Kachori, Pigeon peas Kachori are more popular. Kachori with dry spices are also popular as well. It is believed that Kachoris were originated from Rajsthan or U.P. It is similarly popular to Samosa.
Kachoris are served with dates, tamarind chutney, green chutney etc. Matar Kachori is served with potato curry also.

Serves: 6 pieces
Ingredients:
For dough:
1 cup all purpose flour
1 tsp semolina
1/4 tsp carrom seeds
3 tbsp ghee
Salt to taste
For matar stuffing:
1 cup green peas
1-2 green chillies
1″ piece ginger
1/2 tsp cumin seeds
1/2 tsp red chilli powder
1/4 tsp turmeric powder
1/4 tsp coriander cumin powder
1/4 tsp garam masala
1/4 tsp dry mango powder
1/2 tsp fennel seeds ( roughly crushed )
Pinch of asafoetida
2 tbsp finely chopped coriander
2 tsp oil
Oil for frying kachoris
Method:
1. In a large broad vessel mix all the ingredients of dough and crumble well then add water and knead medium dough, cover and let it rest for 15-20 minutes.


2. To prepare stuffing, firstly make coarse paste of green peas, green chillies and ginger.
3. Then heat oil, add cumin seeds and let them splutter.
4. Add all dry spices and saute for a few seconds on low flame.
5. Add prepared coarse paste and salt. Mix with spices properly and cook for 2-3 minutes.
6. Lastly add coriander ,mix well and turn off the heat.
7. Now knead the dough for 2-3 minutes and divide in equal parts. Take one and roll it.
8. Put spoonful of stuffing in centre.
9. Gather all sides to centre and seal it. Roll it little.

10. In pre heated oil,deep fry kachoris on a slow flame from both sides.


11. Serve hot.
