MORINGA MATHARI

Drumsticks are most commonly used vegetable in Indian house holds. Drumsticks as well drumsticks leaves also have lots of nutrients and health benefits. Moringa olifera is the scientific name of drumsticks tree, originated from the tropical and sub tropical regions if South Asia. Slightly bitter tasted moringa leaves are packed with calcium, protein, iron, vitamin C , beta carotene. These all nutrients make these leaves good pack of health benefits such as lower blood sugar level, helpful in weight loss and high blood pressure and for healthy hair too. In spite of lots of health benefits we should consume it in moderate amounts to avoid heart burns, upset stomach and nausea.
I have tried to make Matharis using these healthy leaves, which turned out delicious.

Serves: 6-8 persons
Ingredients:
2 cup all purpose flour
4 tbsp ghee
1/2 tsp cumin seeds
1/2 tsp carrom seeds
1 tsp sesame seeds
1 tsp red chilli powder
1/2 tsp turmeric powder
Pinch of asafoetida
Salt to taste
2 cup chopped drumstick leaves
For sprinkle:
1 tbsp red chilli powder
1 tbsp black salt
Oil for frying
Method:
1. Mix all the ingredients and knead a medium dough.


2. Divide the dough into equal parts. Take one and roll thin like roti. Use dry flour to roll easily and evenly.
3. Prick it with fork.
4. Cut it into drsired shapes. Here I have cut it in two ways.


5. In a pre heated oil deep fry it on slow to medium flame, till it becomes crispy.



6. Mix both sprinkle spices and sprinkle it on fried mathris.
7. Once they cool completely, store it in air tight container and relish it when you wish.
