MEXICAN KHANDVI

Khandvi , the famous Gujarati snack is melt in mouth rolls which are made from gram flour.
Today, I have twisted the traditional process, stuffed it with mexican filling and made yummy fusion khandvi , adding cheese and making it more delicious.

Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 4 persons

Ingredients:

For khandvi:
1 cup gram flour
2.5 cup sour buttermilk
1/2 tsp turmeric powder
1 tbsp mexican seasoning
Pinch of asafoetida
Salt to taste

For stuffing:
1 cup boiled Rajma or beans
2 onions
6 garlic cloves
1/4 cup tomato puree
2 tbsp mexican seasoning
1 tbsp red chilli powder
1 tbsp oil
Salt to taste
1 cup grated cheese
Finely chopped basil

Method:

1. Mix all ingredients of khandvi and make a lumpfree batter with butter milk. Pressure cook it for 3 whistles.

2. Before pressure cooking khandvi batter, prepare rajma filling and let it cool.
3. Make a paste of onion garlic. Grind ,boiled rajma.
4. Now heat oil, saute onion garlic paste, then add tomato puree and saute it, add red chilli powder, mexican seasoning and mix well. Then add grinded rajma,salt and mix well. Turn off the heat and let it cool.
5. Now remove cooked khandvi batter from cooker and mix and stir well and immediately spread it on clean surface or plate.

6. Spread little thick then regular khandvi.
7. Now carefull spread prepared mexican filling. Then roll it from one end like we roll the khandvi.

8. Cut into piececs. Top up it with grated cheese and fine chopped basil .

Note:
1. You can spread cheese over stuffing,before rolling
