BESAN MATHARI

Mathris/pooris are one of the most popular crispy fried snack. Mathris can be prepared with various flour though wheat flour and all-purpose flour mathris are more liked by people. Nowadays people have become more health conscious, so the use of multi grain flours, gluten free flours is increased.
Here, I have made mathris from gram flour and wheat flour.

Preparation time: 20 minutes
Cooking time: 30 minutes
Serves: 4 persons
Ingredients:
1 cup gram flour
1 cup wheat flour
2 tbsp semolina
1/4 cup oil+ ghee
1/2 tsp cumin seeds
1/2 tsp carrom seeds
2 tbsp dried fenugreek leaves( kasuri methi )
1 tsp red chilli powder
1/4 tsp asafoetida
Salt to taste
Oil for frying
Method:
1. Mix all the flours and dried spices, salt and oil+ ghee and crumble it well.


2. Add dried fenugreek leaves and mix it well.

3. Now add water, little by little and knead a hard dough. Rest it for atleast 30 minutes.

4. After 30 minutes take some oil and knead for 10-15 minutes or till it becomes smooth.
5. Then roll thick like paratha. Cut it in your desired shape. I used a cookie cutter. Prick it with a fork.



6. On a medium flame, heat oil and deep fry matharis from both sides.

7. Once it cool downs completely, store it in air tight container.

Note:
1. Can add red chilli powder, instead of chilli flakes.
2. Can add black pepper and sesame seeds too.
