KESHARIYA KHEER (SAFFRONY RICE PUDDING)

Kheer, phirni or rice pudding, whatever we say, is a delicious creamy and popular Indian sweet/dessert prepared from milk and rice. Basic difference between kheer and phirni is of rice. In kheer ,whole rice is used and in phirni broken rice is used. We can prepare various types of kheer using different ingredients in combination with milk. Some of such kheer are makhana kheer, paneer kheer, sabudana kheer, apple kheer and many others.
Here is basic rice kheer with saffron flavour.
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 4 persons
Ingredients:
1 liter full cream milk
1/4 cup rice,
1/4 cup or to taste sugar
1 tsp saffron
1 tsp cardamom powder
Dry fruits of your choice
Method:
1. Add milk in a nonstick pan or thick bottom pan, turn on the heat. Spare 2 tbsp milk aside. Wash and soak rice for 15-20 minutes.
2. Once the milk starts boiling, add soaked and drained rice. Soak saffron in spared milk.

3. Turn the flame on medium and stir occasionally.
4. When the rice are near to cook, add sugar and mix well.


5. Then add soaked safffron also and cook for a while, you can notice, now our kheer, becomes thick.

6. Add cardamom powder, mix well and turn off the heat.
7. Garnish with dry fruits. Serve warm or chilled. It tastes, best when chilled.

Note:
1. You can add dry fruits in the kheer.
