BRUSCHETTA

Bruschetta is a pooular Italian antipasto ( starter ) prepared from bread and toppings like tomatoes, veggies, olives, cheese etc. It can be served hot or cold. It is pronunced as ‘brusketta’. Bauguette or french loaf is preferable, though you can use other beeads too.
This easy to make recipe has variations as per one’s choice. Here I have made it in my style.

Preparation time: 30 minutes
Resting time: 2-4 hours
Cooking time: 20 minutes
Serves: 4 persons

Ingredients:

2 baguette/ french loaf
1 green capsicum
1 red bell pepper
1 yellow bell pepper
1 onion
1 tomato
1 tbsp olive oil
1 tbsp oregano
1 tsp black pepper powder
1 tsp dry basil
1 cup grated cheese
4-5 tbsp butter
Salt to taste
Red chilli flakes for sprinkle ( optional )

Method:

1. Finely chop all the vegetables.

2. Now in a big bowl, transfer all veggies, olive oil, oregano, basil, black pepper powder and half cup of cheese and mix well. Cover and keep in refrigerator for at least 2-4 hours so the flavour if herbs is infused well in veggies.

3. Cut baguette in slices and dry toast it on a skillet or in oven. ( You can prepare it in advance too. )
4. At the time of serving, add salt in veggie mix. Spread butter on toasted baguette slices.

5. Now put spoonful of prepared topping on buttered slice. Sprinkle some cheese and chilli flakes.

6. Bake it or microwave it for 2 minutes and serve.

Note:

1. You can add fresh basil in veggie mix.
