BATI CHURMA

Churma is a popular Indian sweet, prepared from wheat flour. Though making process varies from place to place but the key ingredients remain the same I.e. wheat flour, ghee ,sugar.
In Rajasthani cuisine, churma is prepared from Bati – a baked wheat flour delicacy which is consumed along with dal. Dal bati churma is a dish which is also a very famous.
Bati churma is prepared by two methods. In one method it is consumed roasted / baked bati (ground in coarse powder)along with ghee, sugar and dryfruits. In other method coarse powder of bati is sauted in ghee and furrher sugar and dry fruits are added.
Traditionally bati is prepared in tandoor or on direct coal. Here ,I have baked it in oven.

Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 4 persons
Ingredients:
For bati:
1 cup wheat flour
1/2 cup wheat coarse flour
2 tbsp oil
Salt to taste
For serving:
4 tbsp powdered sugar
2 tbsp ghee
1 tsp cardamom powder
Method:
1. Mix both the flours, salt and oil and crumble it with hand. We need a flour oil mixture that can formed a fistful crumble. Then knead hard dough by adding water little by little.
2. Then prepare lemon size balls and bake them in a preheated oven for 20 minutes on 200℃.
3. Once baked, let them cool and then grind them along with cardamom.


4. Then sieve it for uniform granules. Choose siever as per your choice of churma texture.


5. At the time of serving, add sugar and melted ghee, mix and serve.

Note:
1. You can cook bati in appe pan too.
2. You can add dryfruits of your choice.
