WATERMELON RIND HALVA

Water melon is a juicy and watery fruit. It contains 92% of water and also contains vitamin A and C , potassium and magnesium in good quantity. Though whole water melon is edible, but major people eat pink/red flesh only. We through it’s rind in garbage as it has no taste. But it is also has same nutritional value as the pink/red flesh.
The dark green ,hard rind of water melon is hard to chew so we can throw it but the white rind contains lots of water along with nutrients and of course it has no taste, and due to this it mixes with whatever taste we give to it. We can prepare pickle, chutney, sabzi, rice and halva from it.

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 2 persons

Ingredients:

1 cup pureed water melon rind
1 tbsp semolina
1 tbsp gram flour
1/4 tsp cardamom powder
1/4 tsp nutmeg powder
1 tbsp almond slices
2 tbsp ghee
1/4 cup sugar ( or taste )
1/2 cup milk

Method:
1. Grind white part of water melon rind without water.
2. Heat ghee, saute semolina and gram flour on slow flame till aroma comes.

3. Now add grinded water melon rind and saute till water evaporates.

4. Then add sugar and saute for few more minutes.

5. Finally add milk, mix and saute till it becomes thick like halva.

6. Add cardamom powder and nutmeg powder.

7. Garnish with almond slices and serve hot.
