GULKAND PHIRNI

Phirni/ kheer is a milky and creamy dessert of India. It is popular all around India, known by different names like kheer, phirni, payasam etc. Though the processes are a bit different but the key ingredients are milk and rice only. Sugar and jaggery both can be used for sweetness. We can add flavours like fresh fruits, dry fruits etc. Here I have made phirni using Gulkand ( rose petals jam ).
Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 2 persons
Ingredients:
1 liter milk
1/4 cup rice
2 tbsp gulkand
2 tbsp rose syrup ( optional )
2 tsp sugar
1 tsp almond silvers
Method:
1. Soak the rice in water for a couple of hours. ( I took broken rice as I like grainy texture, you can take whole rice then grind it in a coarse paste after soaking them.

2. Pour milk in a thick bottom vessel and bring it to boil, once it comes to boil, turn off the heat to low.
3. After 2-3 minutes, add soaked rice and let the rice cook in milk on low flame. Stir occasionally.


4. As the rice will cook, our phirni also becomes thick. Now add sugar and cook for a few minutes.

5. Add Gulkand , mix well and turn off the heat. After it becomes warm , add 1 tbsp rose syrup and mix well.



6. Chill it. Top up with almond silvers and rose syrup and serve chilled.
