GINGER FENUGREEK IDLI WITH SPINACH SAUCE

Idlis are soft and spongy dish from South India which is favourite of all and famous in all over India. Idlis are made from fermented batter of rice and black lentils ( urad dal ) . Idlis are steam cooked in its special stand. Size of idlis can be different.
Today, I have made mini idlis with ginger and fenugreek leaves and served it with a spinach sauce. It is good and healthy option for snack, breakfast and as a starter in parties too.

Preparation time: 15 minutes
Cooking time: 15 minutes
Serves: 4 persons
Ingredients:
For spinach sauce:
1 cup spinach puree
1 tsp oil
1 tbsp finely chopped onions
1 tsp finely chopped garlic
1 tsp finely chopped green chillies
Salt to taste
For idlis:
2 cup idli batter
1 tbsp finely grated tender ginger
1/4 cup finely chopped fenugreek leaves
Salt to taste
Oil for greasing
Method:
1. Heat oil and saute green chillies, onions and garlic.

2. Add spinach puree and salt.
3. Cook for 2-3 minutes . Turn off the heat and keep aside.
For idlis:
1. Add grated ginger and fenugreek leaves in idli batter. Add salt and mix well.


2. Heat the steamer, grease idli stand.

3. Fill idli stand with the prepared idli batter. Steam cook it.
4. Once cooked, let it cool down a little, scrap the sides with knife and unmould idlis from the stand.
5. Serve with the prepared spinach sauce.

Note:
1. Can serve your choice of sauce instead of spinach sauce.
