PALAK PANEER ROLLS
(SPINACH COTTAGE CHEESE ROLLS )

Iron rich spinach, protein rich cottage cheese and glutenfree gram flour, all three ingredients when combined, came out delicious and healthy snack which can be consumed as a snack or as a side dish with meals.

Preparation time : 15 minutes
Cooking time : 20 minutes
Serves : 4 persons
Ingredients:
1 cup gram flour
2 cup buttermilk
1/2 cup spinach puree
1/2 tsp turmeric powder
Salt to taste
50 gram cottage cheese ( paneer )
For spice mix:
1 tbsp red chilli powder
1 tbsp chaat masala
1 tsp black salt ( or to taste )
1 tsp roasted cumin powder
Method:
1. Add salt and turmeric powder to gram flour. Now add butter milk little by little and prepare lumpfree batter. Lastly add spinach puree and mix well.
2. Now pressure cook this batter for 3 whistles.

3. Mix all ingredients of spice mix. Cut cottage cheese into small strips or of the size of your roll. Rub all strips in the spice mix and keep aside.
4. Once the steam is released, remove cooked batter from the cooker.
5. Whisk and mix it properly and immediately spread it on clean work place . You can use spatula as it is still hot .


6. Once it is spread, sprinkle spice mix over it.
7. Then put one piece of spiced paneer at one end and start rolling it with paneer till other end.

8. Prepare rest of the rolls like this.
9. Arrange it in a serving plate. Sprinkle some grated paneer and spice mix and serve.

Note :
1. Can replace paneer with cheese.
