BLACK CURRENT JAM

When we heard the word jam, our taste buds starts tantalising . Jam is made from fresh fruits. Generally making of Jam is considered as lengthy and tricky process but making jam in microwave oven is easy and quick too. Jam can be chunky or smooth. I like chunky so I didn’t make puree of fruit.
Preparation time : 5 minutes
Cooking time : 20 minutes
Ingredients
2 cup black grapes
1/2 cup sugar
1+1 tsp lemon juice
Method
1. Cut grapes into halves, add sugar and 1 tsp lemon juice, mix well cover and rest it for half an hour so sugar dissolves and grapes looks syrupy.
2. Now microwave it on high for 10 minutes, after 5 minutes carefully remove bowl from oven, stir it.
3. Again place it in microwave and cook for 5 minutes. Remove it again , stir and mash the fruits (grapes)against the sides of the bowl. Jam consistency still looks syrupy.

4. Continue to microwave in 2 minutes interval and cook it until the liquid concentrate to sticky syrup that coats the back of spatula and falls in heavy drips to the bowl. It’s sign that jam is ready. If it looks little little liquidy nothing to worry as it will set more firmly as it cools. Cause over cooking can cause crystalization in jam.
5. Once it cools down completely store it in clean , airtight glass jar.

Note:
1. If you feel jam.is liquidy and not becoming thick, can add more 1 tsp lemon juice.
2. Use 8-10 cups capacity bowl , cause when we microwave it, it bubbles up and quadruples in size as it cooks.
