Rajasthan, the land of Maharajas is paradise for foodies. Rajasthani Cuisine is a cuisine with large spread of mouthwatering dishes with vegetarian and non vegetarian food.
Some of the iconic vegetarian food of Rajasthan includes the most popular Dal-bati-churma, bajra methi puri, gatte ki sabzi, ker-sangari, pyaaz kachori, mirchi bada as well as drinks like jaljeera, masala chhach, bajra ki raab, bajra ki khatti rabdi etc. How can we forget to mention sweets of Rajasthan? Mawa kachori, kalakand, ghevar-rabdi , chhe ma ladoo and many more.
Bajre ki khatti rabdi is traditional Rajasthani drink with bajra flour & yogurt. It is usually made in summers along with their meals.
As we all know that bajra ( pearl millet ) is highly rich in iron & protein. It also contain fibre, phosphorus & magnesium in good amount. In result, it has many health benefits too.

Preparation time: 5 minutes
Cooking time : 20 minutes
Serves : 2

Ingredients:
2 tbsp pearl millet flour
1/2 cup curd ( preferably sour )
1/4 tsp cumin seeds
1/4 tsp carrom seeds
1/8 tsp roasted cumin seeds powder

Method:

1. Add 2 cups of water in curd & blend it.
2. Add salt, cumin seeds, carom seeds & blended curd in millet flour & mix well without any lumps.

3. Now in a thick bottom pan, add this mixture and let it boil, stir continuously.

4. Once it starts boiling , turn the flame on slow and let it cook until it thickens. Keep stirring. It will take 5-7 minutes.
5. Add one more cup water & continue to cook till flour is cooked properly without any raw taste.
6. You can add water if the flour is raw . When it cooks completely & reaches at desired consistency turn off the flame.
7. Sprinkle roasted cumin powder at the time of serving. Serve hot.
