KOTHIMBIR VADI
Maharastra cuisine includes mild & spicy dishes. Wheat , rice, jowar, bajri, vegetables, lentils & fruits are dietary staples.
When we are think of Maharastra Cuisine , what comes in our mind? Answer is Vada pav, Pav bhaji, right? But apart of these, ukdiche Modak, kothimbir vadi, thali peeth, misal, aamti, pachadi are also famous & common in Maharastrian cuisine. The use of freshly ground masalas ( spices ) like Goda masala , Malvani masala & Kala masala is the right light of Maharastrian cuisine.
Kothimbir vadi is a delicious savory crispy snack made with gram flour & coriander leaves as key ingredients. In Marathi language “Kothimbir” means kothmir aka coriander leaves & “vadi” means cubes or wedges.

Preparation time: 20 minutes
Cooking time: 15 minutes
Serves: 4 persons

Ingredients:
2 cup finely chopped coriander leaves
1 cup gram flour
1/4 tsp turmeric powder
1 /4 tsp red chilli powder
1/2 tsp coriander powder
1/2 tsp cumin powder
Pinch of asafoetida
1 tbsp white sesame seeds
1/4 cup roasted peanuts
1 tbsp chilli-garlic-ginger paste
Salt to taste
Oil for cooking
Method:
1. Dry roast peanuts, once cool down remove it’s skin with rubning palm. Then grind it in coarse powder.


2. Take a bowl, add all dry ingredients, paste, grinded peanuts & coriander in gram flour. Mix well and prepare thick paste like batter by adding water.

3. In a greased plate or thali, transfer prepared batter & cook in steam like dhokla on a low medium heat till it cooks properly.
4. Cut in squares, once it cools down.
5. Now in a non stick pan or skillet, add little oil & heat, place few squares over it. Cook from both sides till they become crispy.


6. Serve hot with chutney & ketchup.

Note:
1. Can add sugar in batter if you like.
2. Can microwave it instead of steaming.
3. Can deep fry it also.
