GURER NARKEL NARU
( JAGGERY COCONUT LADOO) (VEGAN)

This is very delicious & easy to make coconut ladoo from Bengali cuisine. In Bengali language ‘narkel’ means coconut & ‘gurer’ means jaggery & ‘naru’ means ladoo. This ladoos can be served as sweet & prasad during festivals.

Preparation time: 5 minutes
Cooking time: 10 minutes
Serves : 4 persons

Ingredients:
2 cup fresh grated coconut
1 cup grated jaggery or jaggery powder
1/2 tsp cardamom powder
Coconut oil for greasing palms.
Method:
1. Roast grated coconut on slow flame for few minutes just to remove moisture from coconut.

2. Then add jaggery & mix well .

3. Now cook for about 5-7 minutes on slow flame. Stir continuously.
4. Once jaggery melts properly then don’t cook more.
5. Turn off flame & remove it from stove too. Add cardamom powder.
6. Once it cools doen, grease your palms & make small ladoos.

Note:
1. If you dislike more chewy ladoos, then grate coconut thin & fine.
2. If you are using regular jaggery than add very little water in jaggery and melt it, and add that syrup and cook.
