BIKANERI KAIRI PARATHA
(SPLIT GRAM PARATHA WITH RAW MANGO)

As it name says, these spicy parathas are from Rajasthani Cuicine . Rajasthani cuisine has its own unique flavour by using simple & most basic ingredients, make delicious dishes.
These parathas are stuffed with split Bengal gram as key ingredient & can be consumed as breakfast or in the meals. This can be a healthy breakfast option.
Preparation time : 20 minutes
Cooking time : 20 minutes
Serves : 4 persons.
Ingredients:
2 cup wheat flour
1/4 tsp turmeric powder
1/4 cup finely chopped coriander
1 tbsp oil
Salt to taste
For stuffing:
2 cup boiled split gram ( chana dal )
3 tbsp grated raw mango
1 tbsp garlic ginger paste (optional)
2 tsp finely chopped green chillies
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp coarse grinded fennel seeds
1 tbsp finely chopped coriander
Salt to taste
Oil/ghee for making paratha
Method:
1. Add oil, turmeric powder & coriander into the wheat flour & knead soft dough.


2. Now for the stuffing, take one bowl & add boiled split gram ( drained ) ,garlic ginger paste, green chillies, coriander ,fennel seeds, red chilli powder, turmeric powder, grated raw mango & salt . Mix well.


3. Now divide dough in equal poetions , take one portion & roll little , put spoonful of stuffing & cover from all sides & seal it like we make a stuff paratha. Then roll it again.


4. Now in a pre heated non stick skillet, first cook it little without oil from both side & then add ghee/oil & cook again.


5. Serve hot with curd & pickle.

Note:
1. Squeeze out water from grated raw mango with hand before adding it.
