KHANDVI

Khandvi – soft, melt in mouth , gram flour rolls are basically Gujarati signature delicacy which is popular and favourite in non-Gujarati communities. Basically it’s process needs patience & continuous stirring . But I am making / preparing it in pressure cooker, which makes process fast & easy.

Preparation time: 10 minutes
Cooking time: 20 minutes
Servings: 4 persons
Ingredients:
1 cup gram flour
2-1/2 cup sour butter milk
Pinch of turmeric powder
Salt to taste
For tempering:
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp sesame seeds
1 tsp red chilli powder
Pinch of asafoetida
Method:
1. Make lump free batter of gram flour by adding salt, turmeric and butter milk.
2. Pressure cook it for 3 whistles. Once steam release, open it , mix well & spread it on clean surface or plate.


3. Then roll it , cut in about 1″ pieces and arrange it in a plate.
4. Then give temper with tempering ingredients.

Note:
1. Can sprinkle grated coconut and coriander.
2. For stuff khandvi, after spread khandvi batter, spread your choice of stuffing ( cheese, chutney ) & then roll it.
