SWEET PEARL MILLET FLAT BREAD ( SWEET BAJRI PARATHA

As our country has a hot weather maximum time of the year, we use pearl millet & it’s flour more in winters. We used to make rotla, dhebra, kuler out of it & from left over rotla my mother & grandma used to make ghee-gud-rotla ( crumbled rotla with ghee & jaggery). Here is one more Grandma’s recipe of my fellow foodie friend. I made some changes in her recipe as per our taste.
Ingredients:
1 cup pearl millet flour
3/4 cup jaggery
2 tsp fennel seeds
2 tsp dry ginger powder
2 tbsp ghee
1 tbsp almond silvers
1/4 tsp cardamom powder
Ghee for cooking
Method:
1. Add one cup water in jaggery & turn on heat. Turn off heat when jaggery dissolve completely.
2. Now add fennel seeds, dry ginger powder,cardamom powder & ghee in flour & knead dough with jaggery water.

3. Now take small portion of dough & roll thick roti like paratha.
Roll carefully as pearl millet flour is gluten free,it may break. Can use plastic sheet for rolling.

4. Cook from both sides using ghee on pre heated skillet.

5. Serve hot.

Note:
1. Do not knead dough in advance, it will become soft.
