TAMIYA

TAMIYA:

Tamiya or taamiyah is basically like Falafel. Tamiya/falafel is prepared with little difference in Egypt, Sudan or middle eastern country. In Egypt Fava beans are used to make Tamiya while in Sudan they use chick peas.
This is healthy, nutritious & vegetarian snack consumed through out the Mediterranean countries. It is called Falafel in middle East & north Africa. Tamiya can be eaten alone, with salad or in a sandwich. It is a popular Street food & break fast item there.
Along with chick peas, dill leaves are key ingredient of Tamiya. The Sudanese use chick peas for making Tamiya. I made Tamiya using split gram with additional Indian spices.

Ingredients:

1 cup soaked split grams ( Chana dal)
1 cup roughly chopped dill leaves
1 roughly chopped onion
10 cloves garlic
4 green chillies
1 tsp sesame seeds
1 tsp dry coriander seeds
1/2 tsp fruit salt
Salt to taste
Oil for frying

Method:
1. In a mixture jar, add soaked split grams, onions, garlic, chillies,dill leaves & coarse grind it. Do not add water.
2. Dry roast & roughly pound coriander seeds.
3. Add pounded coriander seeds,sesame seeds, salt & fruit salt just before you want to fry Tamiya.
4. Mix well & fry tamiya from both sides in preheated oil on medium flame.
5. Serve hot.

Note:
1. Can add fresh coriander along with dill leaves.
