SAATPADI ( SEVEN LAYERED SNACK)

Festive mood is on & all Indian women tie their apron & run in a cooking marathon. We stop counting calories, when are in festive mood. Fried snacks, sweets, deserts, hot & fresh snacks & what not.
Saatpadi puri is seven layered fried crispy Indian bread. These crisp beauties are my favourite from childhood. Though being health & calorie conscious made this Saatpadi after ages. But it turned out to be good.

Ingredients:

For dough:
2 cup all purpose flour ( maida)
4 tbsp ghee/oil
Salt to taste.

For slurry/paste:
1/2 cup rice flour
4-5 tbsp ghee

For sprinkle mix:
2 tbsp red chili powder
2 tbsp black salt ( sanchar)
1 tbsp roasted cumin seed powder

Oil for frying

Method:
1. Knead medium hard dough & rest for 15-20 minutes.
2. Made slurry ( spread like) from rice flour & ghee.
3. Now divide dough in seven parts.
4. Take one portion & roll thin roti & make rotis from the rest of the dough portions.
5. Now spread slurry over one roti, put another roti on it & again spread slurry. Complete all rest of the rotis like this. Spread slurry on top roti too.
6. Now from one side start rolling, till another end & press lightly so that the roll do not open.
7. Now cut thin slices like portions from that roll. Take one slice, press lightly & roll again with light hand, just like laccha parathas.
8. Now fry both sides in preheated oil till it becomes crisp & light pink.
9. Sprinkle prepared powder mix over it. Once it cools down, store in air tight container.

Note:
1. Can mix wheat flour too.
2. When frying lightly press with jara/ slotted spatula so layers open up.
