MISTI DOI ( SWEET CURD)

MISTI DOI

Dahi , Doi , Yogurt , Thayir are different names of curd. Curd is included in our everyday meal. Misti Doi is a sweet curd , Bengali’s traditional & popular dessert. It is different from our regular curd. Bengalis consume Misti Doi as a dessert after meals.

Ingredients:
1 litre full cream milk
3/4 cup sugar
1/2 cup home made curd
Method:
1. In a thick bottom pan, add milk & bring it to boil, once it starts boiling add half of the sugar & slow down the flame, boil milk till it reduces to half of the quantity. Stir continuously & scrape the sides.
2. In a thick bottom pan add rest of the sugar & caramelise it. Stir continuously. Once the sugar melts & turns golden & starts bubbling. Turn off the flame & add one tsp water in caramelised sugar & add this to milk & combine well.
3. Once milk becomes lukewarm, add whipped curd & mix properly.
4. Transfer it in the earthen pots or your choice of vessel & allow it to set in warm place. It will take longer time than regular curd to set, around 10-12 hours.
5. Once set keep it in refrigerator for 2-3 hours & serve chilled.
Note:
1. We need more curd to set Misti Doi than regular curd.
2. We can add cardamom also.
